I have been sailing in Croatia at least seven times the last 15 years. The Croatian coast is absolutely beautiful and so are the people. Here is some advice from me.
July and August is very crowded and winds are very low. To get a good spot for the night you must arrive early and forget secluded coves. May or June is better, but the water is to cold to swim. I think September is the best, only the days become shorter. October can be great if the weather is still good.
Most of the times people either cruise the north - Pula to Sibenik area - or the south - Split to Dubrovnik. North area is less busy and wilder - so you tend to get more charter availability and deals up there.
South there are lots of coves and nice towns to berth in at.
Prevailing wind is north-west, so one ways are better north-south. You get more deals on south to north charters. A bus ride is not expensive and as an example Split to Dubrovnik is 4.5 hours.
